- Minced green onion + garlic + ginger
- 1 tablespoon cornstarch
- ½ tablespoon doubanjiang (豆瓣酱, fermented bean paste)
- Cooking oil (plenty)
- Cilantro or scallions (optional)

- 2 tablespoons light soy sauce (生抽)
- 2 tablespoons Chinese black vinegar (陈醋)
- ½ tablespoon dark soy sauce (老抽)
- ½ tablespoon sugar
- A pinch of pepper
- 1 tablespoon cornstarch
- ½ cup water
※ Mix all sauce ingredients together in advance.

🍳 Cooking Instructions
1. Preparing & Dehydrating Eggplant
- Cut the eggplant lengthwise into bite-sized pieces.
- Place in a bowl, add 1 tablespoon coarse salt, mix well, and let sit for 10 minutes.
Salting makes the eggplant cell walls firmer, reducing oil absorption. Eggplant is an oil absorption expert – if you’re not careful, it can turn into an oily mess! - Blanch the salted eggplant in boiling water, then rinse with cold water.
- Squeeze out the water several times and remove all remaining moisture.

- Coat the eggplant evenly with cornstarch.
